Potato Chips Preparation

    Slice the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick) to ensure they cook evenly.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the chips crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a deep pot or a large, heavy-bottomed skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the chips and place them on a paper towel-lined plate.

    While the chips are still hot, sprinkle sea salt and black pepper over them to taste. Repeat the frying process with the remaining potato slices.

    Mince the garlic cloves finely and place them in a mixing bowl.

    Combine Ingredients

    Add the egg yolk, Dijon mustard, and lemon juice to the mixing bowl with the minced garlic.

    Using a whisk or hand blender, mix the ingredients until well combined.

    Add Olive Oil

    Slowly drizzle in the olive oil while whisking continuously. This will help emulsify the mixture, creating a creamy texture.

    Season the Aioli

    Taste the aioli and add salt as needed. Adjust seasoning to your preference.
