Fried Oysters

Prepare the Oysters
Rinse the fresh oysters under cold water to clean them thoroughly. Pat them dry with a paper towel.

Dredge the Oysters
In a shallow bowl, mix together the all-purpose flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk until combined. Dip each oyster first in the egg mixture, then dredge in the flour mixture, ensuring they are well coated.

Fry the Oysters
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded oysters in batches. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Cook the Spinach
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the fresh spinach and cook until wilted.

Make the Cream Sauce
Pour in the heavy cream, nutmeg, salt, and black pepper. Stir to combine and let it simmer for about 5 minutes until slightly thickened.

Prepare the Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, whisking constantly until the mixture thickens. Gradually add the melted butter while continuing to whisk until fully combined. Season with salt and cayenne pepper to taste.
Assembly

Plate the Dish
On a plate, spoon a portion of creamed spinach. Top with crispy fried oysters, crumbled bacon, and drizzle with hollandaise sauce. Finish with a dash of sriracha.
