Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Dry the Potatoes
Drain the fries and lay them out on a clean kitchen towel. Pat them dry thoroughly to prevent oil splatter during frying.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Drain and Season
Remove the fries with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt.
Aioli

Prepare the Garlic
Mince the garlic cloves finely or use a garlic press to crush them.

Combine Ingredients
In a mixing bowl, combine the minced garlic, egg yolk, and lemon juice.

Whisk Together
Using a whisk, slowly drizzle in the olive oil while continuously whisking until the mixture thickens and emulsifies.

Season the Aioli
Add salt and black pepper to taste, whisking until fully incorporated.

Serve
Transfer the aioli to a serving bowl and serve alongside hot fresh-cut fries.
