Potato Preparation

Peel and Cut Potatoes
Peel the Russet potatoes and cut them into evenly sized sticks, about 1/4 to 1/2 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl and cover them with water. Add 1 tsp of salt and let them soak for at least 30 minutes to remove excess starch.

Drain and Dry
After soaking, drain the potatoes and spread them out on a clean kitchen towel. Pat them dry thoroughly to remove as much moisture as possible.

Heat the Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 325°F (163°C).

Fry the Potatoes
Carefully add a batch of the dried potato sticks to the hot oil. Do not overcrowd the pot. Fry them for about 5-7 minutes until they are soft but not browned, then remove and drain on paper towels.

Double Frying
Increase the oil temperature to 375°F (190°C). Fry the potatoes in small batches again for 2-4 minutes until they are golden brown and crispy. Drain on paper towels once more.
