Prepare the Marinade

In a large bowl, combine the olive oil, minced garlic, lemon juice, chopped thyme, salt, and black pepper. Mix well.

Marinate the Goat Meat

Add the goat meat to the bowl with the marinade. Cover and refrigerate for at least 3 hours, preferably overnight, to allow the flavors to infuse.

Cook the Goat Meat

Preheat the grill or oven to medium-high heat. Remove the goat meat from the marinade and shake off excess. Grill or roast the meat for about 25-30 minutes, or until cooked through and slightly charred, turning occasionally.

Prepare the Quinoa

While the goat is cooking, rinse the quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until quinoa is fluffy and liquid is absorbed.

Mix the Side Dish

In a large bowl, combine the cooked quinoa, halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped parsley. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine.

Serve

Once the goat meat is done, let it rest for a few minutes before slicing. Serve the sliced goat alongside the quinoa salad and sprinkle crumbled feta cheese on top.
