Preparing the Fish

Prepare the Breading
In a shallow dish, combine the all-purpose flour, cornmeal, salt, and black pepper. Mix well.

Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded catfish fillets and fry for about 3-5 minutes on each side until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.
Making the Chimichurri Slaw

Combine Ingredients
In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped parsley, chopped cilantro, and minced garlic.

Make the Dressing
In a separate small bowl, whisk together the red wine vinegar, olive oil, salt, and black pepper.

Mix the Slaw
Pour the dressing over the cabbage mixture and toss until everything is well coated. Set aside to allow flavors to meld.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Build the Tacos
On each tortilla, place a piece of fried catfish, top with chimichurri slaw, and add sliced bell pepper.

Serve the tacos with lime wedges on the side for squeezing over the top.
