Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs. Gradually incorporate the flour into the eggs until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

Roll Out the Pasta
After resting, divide the dough into quarters. Roll out each piece using a pasta machine or a rolling pin until thin. Cut into desired pasta shape (tagliatelle or pappardelle are great options).
Bolognese Sauce

Cook the Boar Meat
Add the ground boar meat to the saucepan. Cook until browned, about 8-10 minutes. Drain excess fat if necessary.

Add Tomatoes and Wine
Stir in the crushed tomatoes, red wine, dried oregano, salt, and black pepper. Bring to a simmer and cook for 30-35 minutes, stirring occasionally.

Finish the Sauce
In the last 5 minutes, stir in the chopped fresh basil. Adjust seasoning if necessary.

Mix Ricotta
In a bowl, combine ricotta cheese, lemon zest, lemon juice, and a pinch of salt. Mix until smooth and creamy. Set aside.
Crostini

Prepare Crostini
Preheat the oven to 400°F (200°C). Brush baguette slices with olive oil and place them on a baking sheet. Toast in the oven for about 5-7 minutes until golden brown. After toasting, rub the tops with the halved garlic clove for flavor.
