Braised Short Ribs

Braised Short Ribs Instructions

    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.

    Deglaze and Braise

    Pour in the red wine and scrape up any browned bits. Return short ribs to the pot, add beef broth, thyme, and bay leaves. Bring to a simmer.

    Bake

    Cover and transfer the pot to the oven. Braise for 3 hours, until the meat is tender.

Horseradish Crema Instructions

    Mix Ingredients

    In a bowl, combine sour cream, prepared horseradish, lemon juice, and salt. Mix well and refrigerate until serving.

Pickled Onions Instructions

    Prepare Pickling Liquid

    In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat until sugar dissolves.

    Pickle the Onions

    Place sliced onions in a jar and pour the pickling liquid over them. Let them cool, then refrigerate for at least 1 hour.

Assembly Instructions

    Assemble the Dish

    Once the short ribs are done, shred the meat and serve on a platter with Swiss cheese, pickled onions, and a side of pickles.

    Serve with Au Jus

    Strain the braising liquid to serve as au jus alongside the assembled dish.
