Preparation

    Preparing the Fries

    Preheat your oven to 425°F (220°C). Wash and cut the Russet potatoes into thin strips. Place the potato strips in a large bowl, drizzle with olive oil, and toss well to coat.

    Seasoning

    Add the chopped rosemary, truffle oil, salt, and black pepper to the bowl and mix until the fries are evenly coated.

    Baking

    Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Making the Aioli

    While the fries are baking, prepare the garlic lemon aioli. In a small bowl, mix together ½ cup mayonnaise, 1 clove garlic (minced), 1 tbsp lemon juice, and salt to taste.

    Serving

    Once the fries are done, remove them from the oven and let them cool for a couple of minutes. Serve hot with the garlic lemon aioli on the side.
