Prepare the Walla Walla Onion Jam

In a saucepan, combine chopped Walla Walla onions, sugar, and red wine vinegar. Cook over medium heat until the onions are soft and the mixture thickens, about 30 minutes. Set aside to cool.

Poach the Sweetbreads

In a skillet, heat duck fat over low heat. Add the veal sweetbreads that have been cleaned and soaked in cold water for a couple of hours. Poach for about 20-25 minutes until tender. Remove and let cool slightly.

Prepare the Beef Demi-Glace

In a saucepan, heat the beef demi-glace until warm. Season with salt and pepper to taste.

Assemble the Sliders

Slice the poached sweetbreads into manageable pieces. Place a piece on the bottom half of each slider bun, add a spoonful of Walla Walla onion jam, a few pickled mustard seeds, and drizzle with beef demi-glace. Top with the other half of the bun.
