    Prepare the Strip Loin

    Remove the strip loin from the refrigerator and let it come to room temperature. Pat it dry with paper towels and season generously with salt and black pepper on all sides.

    Sear the Steak

    In a large skillet, heat the olive oil over medium-high heat. When hot, add the strip loin and sear for 4-5 minutes on each side until a golden brown crust forms. Use tongs to sear the edges of the steak as well.

    Cook to Desired Doneness

    Reduce heat to medium and continue to cook the steak, flipping occasionally, until it reaches your desired doneness (about 135°F for medium-rare). This usually takes another 5-10 minutes, depending on thickness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for at least 10 minutes before slicing.

    Prepare the Aji Pancha Sauce

    In the same skillet, add the black garlic and aji pancha. Sauté for 2-3 minutes until the black garlic is fragrant and slightly caramelized. If needed, add a bit of water to loosen the sauce.

    Serve

    Slice the rested strip loin against the grain. Plate with a generous drizzle of the aji pancha sauce, a handful of frico on top, and garnish with torn leaves of Castelfranco chicory.
