Prepare the Beef
Finely dice the Prime Colorado beef tenderloin using a sharp knife. Ensure that the pieces are uniform in size for even flavoring.

Sauté the Mushrooms
In a skillet, heat a small amount of truffle oil over medium heat. Add the amatosa and shiitake mushrooms, and sauté until tender and slightly golden, about 3-4 minutes. Remove from heat and let cool.

Combine Ingredients
In a mixing bowl, combine the diced beef, sautéed mushrooms, capers, Dijon mustard, Worcestershire sauce, and chopped chives. Drizzle with additional truffle oil and season with salt and black pepper to taste. Mix gently to combine all ingredients.

Plate the tartare mixture in a neat mound. Top each serving with a cured egg yolk. Drizzle with a little more truffle oil if desired. Serve immediately with toasted bread or crackers.
