    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for 45 minutes to 1 hour, until tender. Remove and let cool.

    Make the White Bean Purée

    If using dried white beans, soak them overnight and cook until tender. If using canned, rinse and drain. In a blender, combine the white beans, garlic, lemon juice, and olive oil. Blend until smooth and season with salt and pepper to taste.

    Cook the Anasazi Beans

    Rinse the Anasazi beans and cook them in a pot of boiling water until tender, about 30-40 minutes. Drain and set aside.

    Grill the Octopus

    Once the octopus has cooled, cut it into manageable pieces. Preheat the grill to medium-high heat. Brush the octopus pieces with olive oil, season with salt and pepper, and grill for about 3-4 minutes on each side until charred and heated through.

    Plate the Dish

    On a plate, spread a generous amount of white bean purée. Arrange the grilled octopus on top, sprinkle the cooked Anasazi beans around, and dollop with nduja. Garnish with frisée lettuce.
