    Preparing the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut potato strips in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Drying the Potatoes

    After soaking, drain the water and pat the potatoes dry with a clean kitchen towel.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can check the temperature with a kitchen thermometer.

    Frying the Potatoes

    Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes per batch.

    Draining and Seasoning

    Remove the fries from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While still hot, season with salt, pepper, garlic powder, and paprika.
