    Prepare the Pork Belly

    Preheat your oven to 150°C (300°F). Season the pork belly with salt and black pepper. Place it in a roasting pan and cook for 3-4 hours until tender.

    Make the Corn Espuma

    In a saucepan, combine yellow corn kernels with some water and bring to a boil. Once the corn is tender, blend until smooth and strain through a fine mesh sieve. Add salt to taste. Use a siphon to create the espuma or simply serve as a puree.

    Prepare Brown Butter

    In a skillet, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Remove from heat.

    Make the Smoked Pork Demiglace

    In a saucepan, simmer the smoked pork stock until reduced by half. Add lime juice and chili powder, and season with salt and pepper. Simmer for an additional 10 minutes.

    Assemble the Dish

    Slice the cooked pork belly and plate it. Drizzle with brown butter and smoked pork demiglace. Serve with the corn espuma on the side.
