    Prepare the Ingredients

    Take the dry-aged strip steak out of the refrigerator at least 30 minutes before cooking to bring it to room temperature. Preheat your grill or oven to high heat.

    Season the Steak

    Generously season the steak on both sides with salt and black pepper. Allow the steak to sit for a few minutes to absorb the seasoning.

    Prepare the Bone Marrow

    Preheat a small skillet over medium heat. Add the bone marrow and cook for about 5-7 minutes until it is soft and slightly browned. Set aside.

    Cook the Steak

    Place the steak on the grill or in the oven. Cook for 4-6 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare).

    Grill the Chicory

    While the steak is cooking, cut the chicory in half lengthwise and brush with olive oil. Grill for about 2-3 minutes on each side until charred and tender.

    Boil the Marble Potatoes

    In a separate pot, boil the marble potatoes in salted water until fork-tender, about 10-15 minutes. Drain and set aside.

    Slice the steak and plate alongside the grilled chicory and marble potatoes. Top the steak with the cooked bone marrow and sprinkle with fresh herbs. Enjoy!
