Prepare the Dates
Slice the Medjool dates lengthwise and remove the pit. Be careful not to cut all the way through.

Fill the Dates
Spoon a small amount of almond butter into each date, spreading it evenly.

Melt the Chocolate
In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Coat the Dates
Dip each stuffed date into the melted chocolate, ensuring it's fully coated. Use a fork to lift it out and let excess chocolate drip off.

Garnish
Sprinkle a pinch of sea salt and chopped nuts over the coated dates while the chocolate is still wet. If desired, sprinkle with shredded coconut.

Chill
Place the chocolate-coated dates on a parchment-lined tray and refrigerate for about 30 minutes, or until the chocolate hardens.

Serve
Once hardened, serve the chocolate date poppers chilled or at room temperature.
