Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions.

Roast the Plantains
Preheat the oven to 425°F (220°C). Peel and slice the plantains into 1-inch thick pieces. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and caramelized.

Make the Tomato Sauce
In a saucepan, heat the tomato sauce over medium heat. Add salt and pepper to taste, and simmer for 10 minutes. Stir in the ginger habanero sauce to make it spicy.

Assemble the Bowl
In a bowl, layer the jasmine rice, roasted plantains, chopped vegetables, and sliced avocado. Drizzle with the spiced tomato sauce and serve with additional ginger habanero sauce on the side.
