Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the rice and let it cool.

Make Crab Mix
In a bowl, combine crab meat, chopped shallot, and cilantro. Add 1 tablespoon of ponzu sauce and mix well.

Assemble the Maki
Place a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a small border at the top. In the center, layer the yellowtail slices and crab mix.

Roll the Maki
Using the bamboo mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a little water.

Slice the Maki
Using a sharp knife, slice the roll into 8 equal pieces. Wipe the knife with a damp cloth between cuts for clean edges.

Serve
Arrange the maki on a plate. Drizzle with ponzu sauce and top with crispy shallots before serving.
