Prepare the Tart Crust

Add the egg yolks and mix until the dough comes together. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.

Bake the Crust

Bake the tart crust in the preheated oven for 15-20 minutes or until lightly golden. Remove from oven and let it cool.

Make the Coconut Filling

In a bowl, whisk together the coconut cream, shredded coconut, lime juice, and lime zest until well combined. Pour this mixture into the cooled tart crust.

Bake the Filling

Return the tart to the oven and bake for an additional 20-25 minutes, until the filling is set and lightly golden on top. Remove from oven and let it cool.

Prepare the Meringue

In a clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks form.

Top the Tart with Meringue

Spread the meringue over the cooled tart filling, ensuring it reaches the edges to seal in the filling.

Burn the Meringue

Using a kitchen torch, carefully burn the meringue until it is lightly browned. If you don’t have a torch, you can place it under a broiler for a minute or two, watching closely.

Garnish with lime slices and serve the coconut tart chilled or at room temperature.
