    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold this mixture into the rice. Allow to cool.

    Make the California Roll

    Lay a nori sheet on a bamboo mat. Spread a layer of sushi rice over the nori, leaving a small border at the top. Place avocado, cucumber, and optional protein in the center. Roll tightly using the bamboo mat, sealing the edge of the nori with a little water. Cut into 6-8 pieces.

    Prepare the Second Maki Roll

    Repeat the process for your choice of maki roll, using your preferred fillings.

    Make the Salad

    In a bowl, mix carrots, cucumber (sliced), and wonton strips. Toss with miso yogurt vinaigrette (combine miso paste and yogurt in a bowl, mix until smooth).

    Serve

    Plate the sushi rolls alongside the salad. Sprinkle sesame seeds over the rolls and serve with soy sauce on the side.
