Prepare the Filling
In a mixing bowl, combine ground pork, green onions, garlic, ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

Assemble the Potstickers
Take a potsticker wrapper and place about 1 tablespoon of the pork filling in the center. Moisten the edges with water and fold the wrapper over to form a half-moon shape. Pinch to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
In a large skillet, heat vegetable oil over medium-high heat. Add potstickers, flat side down, and cook until golden brown (about 3-4 minutes). Add 1 cup of chicken broth to the skillet, cover, and steam for about 5 minutes until the potstickers are cooked through.

Prepare the Broth
In a saucepan, heat the remaining chicken broth and add chili flakes. Simmer for 5 minutes, then strain if desired.

Serve
Serve the potstickers hot with chili-soy broth and carrot-herb salad on the side. Garnish with crispy leeks.
