    Prepare the Trout

    Season the trout fillets with salt and black pepper on both sides.

    Sauté the Kale and Tomatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the kale and sauté until wilted, about 3-4 minutes. Add the cherry tomatoes and cook until they are slightly softened, about 2 minutes. Season with salt and black pepper, then set aside.

    Pan-Sear the Trout

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Once hot, place the trout fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 2-3 minutes until the fish is cooked through.

    Assemble the Dish

    On each plate, place a portion of the sautéed kale and tomatoes. Top with the pan-seared trout fillet. Garnish with pickled red onion, sliced radishes, fresh herbs, and croutons. Drizzle with chili-hazelnut pesto before serving.
