Preparation Steps
- 1
Cook the Farro
In a medium pot, bring 3 cups of water to a boil. Add the farro and a pinch of salt. Reduce heat to low, cover, and simmer for 25-30 minutes, or until tender. Drain any excess water and set aside.
- 2
Char the Grapes
While the farro is cooking, heat a skillet over medium-high heat. Add the grapes and cook for 4-5 minutes, stirring occasionally until they begin to blister and char. Remove from heat and set aside.
- 3
Prepare the Dressing
In a small bowl, whisk together olive oil, apple cider vinegar, turmeric, salt, and black pepper until well combined.
- 4
Combine the Salad
In a large bowl, combine the cooked farro, charred grapes, chopped kale, diced apple, sliced shallot, chopped almonds, and basil. Drizzle with the turmeric vinaigrette and toss gently to combine.
- 5
Serve
Transfer the salad to a serving platter and sprinkle with grated pecorino cheese before serving.
