Prepare the Fries
Wash and peel the russet potatoes. Cut them into thin strips to create fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or a large pot over medium-high heat. Once the oil is hot, drain and pat dry the soaked potatoes. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove fries from oil and drain on paper towels. Sprinkle with salt immediately.

Make the Aioli
In a bowl, combine mayonnaise, minced garlic, lemon juice, and olive oil. Stir until well mixed. Season with salt and pepper to taste.

Serve
Serve the hot fries with the aioli on the side for dipping.
