    Prepare the Beets

    Preheat your oven to 400°F (200°C). Wash the golden beets thoroughly and trim the tops and tails. Wrap each beet individually in aluminum foil and place them on a baking sheet.

    Roast the Beets

    Roast the beets in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and let cool slightly.

    Peel and Slice

    Once the beets are cool enough to handle, unwrap them from the foil and peel the skin off using your hands or a paper towel. Cut the beets into wedges or slices.

    In a small bowl, mix the goat cheese, honey, smoked chili powder, and a pinch of salt and black pepper until well combined.

    Arrange the sliced beets on a serving platter. Drizzle with olive oil, and then spoon the goat cheese mixture over the beets. Sprinkle with pumpkin seeds and fresh dill.
