    Prepare the Sushi Rice

    Cook sushi rice according to package instructions. Once cooked, let it cool down to room temperature.

    Grill the Asparagus

    Preheat a grill or grill pan. Toss the asparagus with a little olive oil, salt, and pepper. Grill until tender, about 5-7 minutes. Let cool and chop into smaller pieces.

    Prepare the Filling

    In a mixing bowl, combine vegan cream cheese, grilled asparagus, sliced golden beet, sliced almonds, fresh basil, citrus juice, and sweet agave mustard. Mix well.

    Assemble the Maki

    Place a nori sheet on a bamboo sushi mat. Wet your hands and spread an even layer of sushi rice over the nori, leaving a small border at the top. Add a line of the filling mixture along the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

    Using a sharp knife, slice the roll into 8 equal pieces. Serve with additional sweet agave mustard or soy sauce for dipping.
