Prepare the Tomato Soup
In a pot, melt 1 tablespoon of butter over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

Add canned diced tomatoes, vegetable broth, dried basil, salt, and pepper to the pot. Bring to a boil, then reduce heat and let simmer for 15 minutes.

Use an immersion blender to puree the soup until smooth. Adjust seasoning if necessary. Keep warm on low heat.

Make the Panini
Spread the remaining tablespoon of butter on one side of each slice of sourdough bread.

Layer cheddar and mozzarella cheese between two slices of bread, buttered side out.

Heat a panini press or skillet over medium heat. Grill the sandwich until golden brown and cheese is melted, about 3-4 minutes per side.

Serve
Slice the grilled cheese in half and serve with the tomato soup for dipping.
