1. Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, black pepper, and dried thyme.
2. Sauté the Vegetables
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the sliced mushrooms and cook until they are tender, about 5 minutes. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
3. Stuff the Chicken
Remove the skillet from the heat and mix in the crumbled goat cheese with the mushroom and spinach mixture. Carefully cut a pocket into each chicken breast and stuff with the mixture.
4. Bake the Chicken
Place the stuffed chicken breasts in a baking dish and drizzle with a little more olive oil if desired. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
5. Serve
Once done, remove from the oven and let rest for 5 minutes before slicing. Serve warm with your choice of side dishes.
