1. Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, 1/2 cup of sugar, and melted butter. Mix well until the crumbs are evenly coated.
2. Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes. Remove from the oven and let cool.
3. Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and mix until combined.
4. Add Remaining Ingredients
Add the sour cream, vanilla extract, eggs, and lemon juice to the cream cheese mixture. Beat on low speed until smooth and fully combined, being careful not to overmix.
5. Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan.
6. Bake the Cheesecake
Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
7. Cool and Chill
