    Prepare the Hash

    In a large skillet, heat duck fat over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to brown.

    Add Vegetables and Steak

    Add the diced onion and bell pepper to the skillet. Cook for another 5 minutes. Then, add the cubed steak, salt, and black pepper. Cook until the steak is browned and the potatoes are tender, about 8-10 minutes.

    Make the Cheese Sauce

    In a small saucepan, combine the shredded smoked gouda cheese and milk. Heat over low heat, stirring continuously until the cheese is melted and the sauce is smooth. Remove from heat.

    Cook the Eggs

    In a separate skillet, cook the eggs over easy according to your preference.

    Assemble the Dish

    Serve the steak hash on a plate, drizzle the smoked gouda cheese sauce over the top, and place the eggs over easy on top of the hash. Serve with toasted bread on the side.
