Make the Chips
Cut each corn tortilla into 6 wedges. Heat the vegetable oil in a deep frying pan over medium-high heat. Once hot, fry the tortilla wedges in batches until they are golden brown and crisp, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still warm.

Prepare the Salsa
Dice the tomatoes and red onion, and finely chop the jalapeño (remove seeds for less heat). In a mixing bowl, combine the diced tomatoes, red onion, chopped cilantro, jalapeño, lime juice, and salt. Mix well and adjust seasoning to taste.
