Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Set Up Breading Station
In three separate bowls, set up your breading station: one with flour seasoned with garlic powder, onion powder, salt, and pepper; one with plant-based milk; and one with panko breadcrumbs.

Bread the Cauliflower
Dip each cauliflower floret first into the flour, then into the plant-based milk, and finally coat it with the panko breadcrumbs. Set aside on a plate.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot.

Fry the Cauliflower
Carefully add the breaded cauliflower florets to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

Make the Creamy Herb Sauce
In a bowl, mix together the vegan mayonnaise, chopped fresh herbs, salt, and pepper to taste.

Serve
Serve the panko fried cauliflower hot with the creamy herb sauce on the side and a drizzle of buffalo sauce. For a vegan option, provide sambal sauce instead of buffalo sauce.
