Marinate the Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Coating
In another bowl, add the all-purpose flour and season it with a pinch of salt and pepper. Mix well.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the seasoned flour, ensuring a good coating.

Fry the Chicken
Carefully place the coated chicken in the hot oil and fry for 5-7 minutes per side, or until they are golden brown and cooked through. Remove and drain on paper towels.

Toast the brioche buns lightly. Spread chipotle mayo on the bottom half of each bun, add the fried chicken, top with mixed greens, sliced tomato, red onions, and pepper jack cheese. Place the top half of the bun on and serve immediately.
