Beignet Preparation

Prepare the Dough
In a small bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. In another bowl, whisk together the milk, eggs, and melted butter. Add the yeast mixture to the egg mixture.

Combine and Knead
Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for about 5 minutes until it is smooth and elastic.

Let It Rise
Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Roll and Cut
Once risen, roll out the dough on a floured surface to about 1/4 inch thickness. Cut into squares (about 2x2 inches).

Heat Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry Beignets
Fry the squares in batches until they are golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Serve
Toss the fried beignets in powdered sugar and serve warm with chai caramel and raspberry sauce on the side.
