Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries, about 1/4 to 1/2 inch thick. Soak the fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Preheat the Oven

    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Toss with Duck Fat

    In a large bowl, toss the dried fries with duck fat until they are evenly coated.

    Season the Fries

    Sprinkle the salt, black pepper, garlic powder, and paprika over the fries. Toss again to ensure even seasoning.

    Bake the Fries

    Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 30-35 minutes, turning them halfway through, until they are golden brown and crispy.

    Serve

    Remove the fries from the oven and let them cool slightly before serving. Enjoy with creamy herb sauce and maple dijon.
