Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and set aside on paper towels to drain excess fat.

    Caramelize the Onions

    In the same skillet, add sliced yellow onions and cook over low heat, stirring occasionally until they are golden brown and caramelized, about 20 minutes.

    Assemble the Panini

    On a slice of panini bread, layer duck confit, crispy bacon, gouda cheese, caramelized onions, and apricot thyme jam. Top with the second slice of bread.

Cooking

    Grill the Panini

    Preheat a panini press or grill pan over medium heat. Place the assembled sandwich on the grill and cook for 3-5 minutes, or until the bread is golden brown and the cheese is melted.

    Slice the panini in half and serve with a side of mixed greens salad or sweet potato fries if desired.
