Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let cool while you prepare the filling.

Prepare the Filling
In a large mixing bowl, combine cream cheese, sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy. Add eggs one at a time, mixing well after each addition. Pour in sour cream and mix until smooth.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Serve
Turn off the oven and crack the door open, allowing the cheesecake to cool slowly for about 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
