Prepare the Pork
Trim excess fat from the pork shoulder and season it with salt, black pepper, paprika, and brown sugar.

Slow Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add chopped onion, minced garlic, and apple cider vinegar. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat.

Combine with BBQ Sauce
Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook on low for an additional 30 minutes to heat through.

Assemble the Sandwich
Toast the buns lightly. Pile the pulled pork onto the bottom half of each bun, add pickles if desired, and top with the other half of the bun.
