Cajun Grilled Chicken

Prepare the Chicken
Start by marinating the chicken breasts. In a bowl, combine the olive oil and Cajun seasoning. Coat the chicken breasts in the mixture and let them marinate for at least 30 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Add Cheese
During the last few minutes of grilling, top each chicken breast with equal parts of Monterey Jack and habanero Jack cheese. Close the grill lid to melt the cheese.

Prepare the Buns
While the chicken is grilling, slice the sandwich buns in half. Optionally, you can toast them on the grill for a minute to add flavor.
Coleslaw

Mix the Coleslaw
In a large bowl, combine shredded green cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well coated.

Chill the Coleslaw
Cover the coleslaw and refrigerate for at least 20 minutes before serving to allow the flavors to meld.

Open the bag of kettle chips and place them in a serving bowl.
