    Cook the Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper. Pour the eggs into the skillet with the chorizo, stirring gently until the eggs are just set, about 3-4 minutes.

    Add Cheese

    Once the eggs are cooked, sprinkle the cheddar cheese over the mixture and stir until melted and well combined. Remove from heat.

    Warm the Tortillas

    In a dry skillet or microwave, warm the flour tortillas for about 30 seconds until pliable.

    Assemble the Burrito

    Place a generous scoop of the chorizo and egg mixture in the center of each tortilla. Add a spoonful of salsa and sour cream on top.

    Roll the Burrito

    Fold the sides of the tortilla over the filling and roll tightly from the bottom up. Repeat for all tortillas.
