Hot Kentucky Brown

Prepare the Mornay Sauce
In a saucepan over medium heat, melt 2 tablespoons of butter. Add 2 tablespoons of all-purpose flour and whisk for about 2 minutes. Gradually whisk in 2 cups of milk, stirring constantly until thickened. Remove from heat and stir in 1 cup of shredded cheese until melted. Season with salt and pepper to taste.

Assemble the Sandwich
On a slice of toasted white bread, layer 1 cup of sliced turkey breast. Top with another slice of toasted bread. Pour 1 cup of Mornay sauce over the top and sprinkle with additional cheese.

Garnish
Place sliced tomatoes on top of the cheese and sprinkle with 2 tablespoons of chopped green onions.

Bake
Preheat the oven to 375°F (190°C). Place the assembled sandwiches on a baking sheet and bake for 15-20 minutes, or until the cheese is bubbly and golden.

Cook the Tater Tots
While the sandwiches are baking, prepare the tater tots according to the package instructions, either by baking or frying them until crispy and golden brown.
