Mousse Preparation

Prepare Dark Chocolate Mousse
Melt dark chocolate in a heatproof bowl over simmering water. Let it cool slightly. Whip 200 ml heavy cream until soft peaks form. In a separate bowl, whisk egg whites until soft peaks form, then gradually add sugar and whisk until stiff peaks form. Fold chocolate into whipped cream, then gently fold in egg whites. Spoon into serving glasses and chill for at least 1 hour.

Prepare Milk Chocolate Mousse
Repeat the melting process for milk chocolate. Allow to cool. Whip another 200 ml of heavy cream and fold into the cooled chocolate. Prepare egg whites as before and fold into the mixture. Layer on top of the dark chocolate mousse and chill again for 1 hour.

Prepare White Chocolate Mousse
Melt the white chocolate and let it cool. Whip the remaining 200 ml heavy cream and fold it into the white chocolate. Whisk the egg whites as before and fold into the white chocolate mixture. Layer this on top of the milk chocolate mousse and chill for another hour.

Prepare Cocoa Crumbles
Crush some chocolate cookies (or brownies) into fine crumbs. Sprinkle cocoa powder over the crumbs for added flavor.

Assemble
Once all layers are set, top the final layer of white chocolate mousse with the cocoa crumbles before serving.
