Cook the Bulgur

In a medium saucepan, bring the water to a boil. Stir in the bulgur wheat, reduce heat to low, cover, and simmer for about 10-12 minutes until the bulgur is tender. Remove from heat and let it cool.

Prepare the Vegetables

While the bulgur is cooling, chop the parsley, mint, tomatoes, and green onions. Combine them in a large mixing bowl.

Mix the Ingredients

Once the bulgur has cooled, fluff it with a fork and add it to the bowl with the chopped vegetables.

Dress the Salad

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and mix well to combine.

Serve

Let the salad sit for about 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
