Preparation Steps

  1. 1

    Roast the Eggplant

Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them cut-side down on a baking sheet. Roast for about 30-40 minutes, until the skin is charred and the flesh is very soft.

  2. 2

    Cool and Scoop

Remove the eggplants from the oven and let them cool for a few minutes. Once cool enough to handle, scoop the flesh out of the skins and place it in a mixing bowl.

  3. 3

    Blend the Ingredients

To the bowl with the eggplant flesh, add tahini, garlic, lemon juice, olive oil, ground cumin, salt, black pepper, and paprika. Use a fork or a food processor to blend until smooth and creamy.

  4. 4

    Adjust Seasoning

Taste the baba ghanoush and adjust the seasoning if necessary. You can add more salt, lemon juice, or tahini to suit your taste.

  5. 5

    Serve

Transfer the baba ghanoush to a serving bowl. Drizzle with olive oil and sprinkle with fresh parsley. Serve with pita bread or assorted veggies for dipping.
