    Prepare the Oven

    Preheat your oven to 350°F (175°C).

    Mix the Fruit

    In a large bowl, combine the raspberries, pineapple juice, lime juice, and half of the sugar. Stir gently to mix and set aside to marinate for about 10 minutes.

    Combine Dry Ingredients

    In another bowl, whisk together the flour, remaining sugar, baking powder, and salt.

    Add Wet Ingredients

    Pour in the milk and melted butter into the dry ingredients. Mix until just combined; do not overmix.

    Assemble the Cobbler

    Pour the batter into a greased baking dish. Spoon the marinated raspberry and pineapple mixture over the batter. Do not stir.

    Bake

    Pour the club soda over the top of the cobbler. Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick inserted into the batter comes out clean.

    Serve

    Allow to cool slightly before serving. Enjoy warm, optionally with ice cream or whipped cream.
