In a large brew kettle, heat your filtered water to about 165°F (74°C). Add the Pale Malt, Crystal Malt, and Chocolate Malt. Maintain the temperature around 150°F (65°C) for 60 minutes, stirring occasionally.

Mashing

After mashing, sparge the grains with hot water (around 170°F or 77°C) to rinse out the sugars. Collect the liquid in your brew kettle.

Sparging

Bring the wort to a boil and add the Cascade Hops. Boil for 60 minutes, adding the Centennial Hops in the last 15 minutes of the boil.

Boiling

After the boil, cool the wort quickly using an immersion chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Lager Yeast and seal with an airlock. Allow it to ferment at 50°F (10°C) for 2 weeks.

Fermentation

After fermentation is complete, transfer the beer to a keg or bottles, and condition for another 2 weeks at 35°F (2°C).

Conditioning

Once conditioned, pour your homemade Dark Matter Lager into a glass and enjoy responsibly!
