In a large brew kettle, heat 5 gallons of filtered water to 165°F. Add Pilsner, Munich, and Carapils malts, stirring gently. Maintain the temperature at 150-155°F for 60 minutes.

Mash the Grains

After mashing, remove the grains and bring the liquid to a boil. Add Hallertau hops and boil for 60 minutes. Add Saaz hops for the last 15 minutes of the boil.

Boil the Wort

Cool the wort quickly using a wort chiller or an ice bath. Transfer to a sanitized fermenter and pitch the Pilsner yeast. Seal and allow to ferment at 50-55°F for 2 weeks.

Cool and Ferment

After fermentation is complete, transfer the beer to a bottling bucket. Add priming sugar if bottling. Fill sanitized bottles, cap them, and let condition at room temperature for 1-2 weeks.
