Brewing Directions

1. Mashing

In a large pot, heat 4 liters of water to 65°C (149°F). Add the Pilsner malt, wheat malt, and flaked corn. Hold the temperature for 60 minutes while stirring occasionally.

2. Sparging

After mashing, drain the liquid (wort) into another pot. Rinse the grain with hot water (around 75°C or 167°F) to extract as much sugar as possible, collecting about 4 liters of wort.

3. Boiling

Bring the wort to a boil, add the hops, and boil for 30 minutes. Add the coriander seeds and Himalayan pink salt in the last 5 minutes of the boil.

4. Cooling

Cool the wort quickly to about 20°C (68°F) using an immersion chiller or an ice bath.

5. Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Add the lactic acid and yeast, then seal with an airlock. Allow it to ferment for about 1-2 weeks at room temperature.

6. Bottling

Once fermentation is complete, siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them carbonate for another week.

7. Enjoy
