    Prepare the Beer Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer until the batter is smooth and has no lumps. Set aside for 15 minutes.

    Prepare the Cod

    Pat the cod fillets dry with paper towels and season both sides with salt and pepper. Dip each fillet into the beer batter, ensuring they are fully coated.

    Fry the Cod

    In a deep frying pan or pot, heat the oil to 350°F (175°C). Carefully place the battered cod fillets in the hot oil, frying until they are golden brown and crispy (about 4-5 minutes per side). Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips for frying. Soak the potato strips in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    In another deep frying pan or pot, heat the oil to 350°F (175°C). Carefully add the potato strips in batches, frying until they are golden brown and crispy (about 5-7 minutes). Remove and drain on paper towels, immediately sprinkling with salt.

Tartar Sauce

    Mix the Tartar Sauce

    In a small bowl, combine the mayonnaise, chopped dill pickles, capers, and lemon juice. Stir well and season with salt and black pepper to taste. Refrigerate until ready to serve.
